Alon Lagstein was interviewed by Restaurant Dive for a Q&A on ghost kitchens. The piece discusses recent pitfalls and the challenges facing the ghost kitchen industry, and why Lagstein feels that certain market conditions could eventually give ghost kitchens a second chance at success.
“The pandemic gave the business model a false positive,” said Lagstein. “The demand for delivery grew so quickly that ghost kitchens were able to triple or quadruple their revenue…[But] once that second gen restaurant space starts getting snapped up over time, it will tilt the scales in favor of brands considering ghost kitchens once again.”
